How long does the wasabi infused flying fish roe keep
An unopened tin of flying fish roe in constant refrigeration will keep for two weeks. Once opened, it will last for approximately one week. When not being served, the most important thing is to keep the tin closed to keep air from desicating the beads. After opening, make sure to smooth out the surface of the roe to minimize air pockets in the tin.

I don’t know if I like wasabi. Is this very spicy?
The wasabi infusion adds a mild spice and additional flavor without being overwhelming. Flying fish roe is clear by nature; the pale green color is from the wasabi.
